Chef Ricardo Gullo e sua criatividade em nova casa

O experiente chef de cozinha Ricardo Gullo, com passagem em badalados e estrelados restaurantes no Brasil, Chile e Itália, assumiu há um mês o comando da área de gastronomia do Hotel Laghetto Stilo Barra Rio, na posição de Chef Executivo, onde já está promovendo uma transformação percebida e elogiada pelos hóspedes.
Ricardo Gullo começou cedo a exercer seu ofício. Desde os 15 anos de idade, já mostrava toda sua criatividade para o mundo em um restaurante no bairro da Urca, no Rio de Janeiro, o que lhe rendeu uma matéria em O Globo que o definiu como “o mais jovem chef da cidade”. Fiel à suas raízes da Calábria – Sul da Itália – aliada ao amor pela arte de cozinhar fizeram o jovem embarcar para a terra de seus ancestrais atuando em restaurantes da região e aperfeiçoando a cada dia sua técnica. Estudando ou trabalhando, Gullo passou por renomadas casas como o Cipriani no Copacabana Palace; a rede de churrascarias Porcão; as unidades do Belli na Itália e no Chile além da Padaria da Praia na Barra da Tijuca. Outra paixão do chef é lecionar. Como docente, já compartilhou seus conhecimentos nos cursos de Gastronomia no SENAC e na Universidade Estácio de Sá.
Em seu novo desafio, Ricardo Gullo retorna ao mundo frenético (e mágico) da Hotelaria. Além de responder pelo restaurante do Hotel – Stilo – as áreas de Room Service, Banquetes para Eventos Internos, Catering para Eventos Externos e Mimos para o Serviço VIP estarão sob seu olhar atento e inventivo. Nesta primeira etapa, o chef tem se dedicado à revisão dos cardápios, padronização dos processos e fichas técnicas, reforço nos procedimentos de segurança alimentar, biossegurança e uma nova conceituação da gastronomia da casa, conferindo-lhe ares mais contemporâneos, arrojados, mas sem se esquecer da força dos pratos clássicos, que passarão por uma releitura. Festivais gastronômicos e uma aproximação com a comunidade da Barra da Tijuca estão nos seus planos para um futuro próximo. Para ele, o brasileiro aos poucos tem frequentado restaurantes de hotéis que conferem, ao mesmo tempo, qualidade da cozinha, instalações agradáveis e segurança – diferenciais competitivos na decisão do cliente.
